I am flabulous!

Yes, I am flabulous!  I don’t know why or how it happens, but it seems that my lack of will, when it comes to munchies, really does a doozy on the old love handles.

Love handles…really…I have heard many phrases regarding body weight.  You now, thin may be in but fat is where it’s at.  Or Diet is Die with a T (thank you Garfield the lasagna eating cartoon cat).  How about being described as elegantly filled out.  Yes…so many nice terms.  I recall even reading about good ol’ England in the 1800s.  The larger the better.  If you were thin and tiny of build then it meant you couldn’t afford a good meal.

I myself am working on getting rid of about 30 lbs.  Yes, according to my BMI (body mass index) and according to ANY and EVERY website I have visited, my ideal weight, for someone 5 foot 5 inches and over 40 years of age should be about 140 lbs.  So, I have begun my journey to thinless…yet again.

I started rethinking my approach.  In the past, every time I started losing weight I would get all excited.  I would lower the amount of food intake.  I would eat more fruits and veggies.  I would buy “healthy” snacks…you know, those dry, dry, dry…I mean really dry….ack ack…crackers.  Last time I even kept a food journal on Fitness Pal.  Amazing to see how many calories are in the foods we eat.  Then it happens.  The weight starts coming off.  I start “cheating” on myself.  I would sneak in a bag of chips or some cookies because I was doing so well with my new eating plan (right…it’s not a diet because that word just leads to failure).  Then it would suddenly become a binge weekend with pizza and wings and nachos…oh my!  That leads to a pound or two coming back.  NO big deal right?  Then I start back to my old eating habits because I love the taste of food!  I love all the ooey gooey cheeses.  I love burgers and I love french fries and I love my pizza and my wings.  And there I go…off the rails…yet again.

Well, this time, I am trying out something new.  I am NOT giving up my favourite foods at all.  I am eating less of everything but I have added this new thing…it’s called exorcising…ahem…exercising.  (I prefer exorcising…I’m trying to purge the evil fat right?).  So, I have started using my 5 lb dummies (I mean dumb bells).  I walk the dogs an hour a day.  Very soon my Xbox shall have Jillian whats-her-name from “Biggest Loser” yelling at me.  I will learn to like sweat.

Yes, that is my newfound plan for body modification.  I believe I can do this.  I actually have dreams about my new slender, self going to the beach and looking downright goddesslike.  (Really, these happy thoughts are what are keeping me going as I look at the squishy, cuddly version of me in the mirror). 

The one thing that I have learned over the years is that no matter how thin or how “full-bodied” I get, it’s the inside that matters the most.  Sure I  love it when I lose weight, but I also don’t mind being heavier.  As long as I am happy on the inside and my family is happy, then the outside doesn’t matter as much.  I have learned that that opinions of others don’t matter as much as loving myself. 

Losing weight right now is more for health reasons…I plan to be around and playing with Little Kennie for a long time and no health problems will get in the way of that.

My journey to the Land of Sweat (and tears) will be interesting but for now, as I start my new life goal, I will remember to look in the mirror every day and say, “You look Flabulous!”

Mmmm … savory tarts

I believe I had mentioned before that I love to cook.  My favorite meal:  the appetizer.   I love going out to dinner with Monkey Breath…a.k.a. my niece.  (One day I will explain my obsession with giving people bizarro nicknames…lol)  For now I will just tell you about our dinner dates.

Our meal outings involve us turning to the first page of the menu.  Yes, appetizers.  I can forgo any main meal and just enjoy nibbling and noshing on a variety of treats.  Well MB is the same.   Once we order our variety of nibblers, we suddenly have no room for our plates since every appetizer comes out on a large plate all prettily decorated.  But who cares right?  We will have garlic bread with cheese (always cheese…you recall that obsession of mine).  We will have sticky, chicken wings.  We will order mozzarella sticks.  We will order an oriental salad.  On other days, we will have nachos with cheese and bruschetta (Monkey Breath’s all time favourite).  Quesadillas are wonderful too.  We LOVE the appetizer dishes. Sadly, our great need for diversity has us clutching our stomachs because we just have to try everything and our bellies just don’t have that much expansion room.  So, we are extremely grateful to have those lovely little take away containers given to us so that we can enjoy our meal again the next day.  Hopefully we will have made some room in our stomachs by then.  Mmmmm, sooooo good.

Now, I told you that story so that I could tell you this one. 

While grocery shopping (at a leisurely pace) this past weekend, I came to the cheese counter to find out what yummy cheeses were on sale this week.  Mozzarella was on sale so that was good as I was running low and my cheese-aholics would surely be craving some soon.  I wandered around some more and saw that all the Greek cheeses were on sale.  That was nice.  I love making a salad for my lunches comprised of tomatoes and cucumbers and feta.  No salad dressing needed as the feta has a nice, salty taste to it and the juice from the tomatoes mixes nicely with the cheese to make a sort of salad dressing all on its own.  I was just about to leave the Greek display when I saw it.  OMG!  It was halloumi.  Yes yes…real halloumi cheese!  

Now, you may be asking yourself, what the heck is halloumi?  Short description:  It’s a brined cheese made of goats and sheep milk.  The longer description is that it has a higher melting point than other cheeses (i.e. mozzarella) so you can fry it, grill it, bake it.  Really neat right?

So, about two years ago, in the local newspaper, there was a recipe for halloumi tarts.  Wiseguy read it and said, “We should make this.”  Hmmm, what the heck was halloumi?  So, we went to our favourite grocery store and asked for this bizarre sounding cheese and yup…they actually had it.  We brought it home.  Opened up the plastic packaging and cut off a taster piece.  Hmmm, kind of salty, cheese.  Kind of like mozzarella, but firmer.  Then we took our recipe and began creating.  After baking, it was time to taste.  Mmmmm.  Just one more tart.  Mmmmmmm.  Ok, this is the last one.   Mmmmmm.  Ok, all gone…we have to bake some more.  Well, for the last 2 years I could not find this cheese again.  So, imagine my surprise and overwhelming joy at seeing that it’s back!

Let me tell you, this is definitely one recipe that you will love to make again and again. So easy and quick and your guests will love it.  Especially when it’s hot out of the oven.  Opa!

Welcome to my World of Appetizers!  (I will surely be posting many, many more for you to enjoy)

Halloumi Tarts

Ingredients:

  • 36 cherry tomatoes (quartered)
  • 5 oz. (about 1 ¼ cups) halloumi cheese (cut into ¼  inch cubes)
  • 2 tbsp fresh thyme, chopped
  • 36 mini pie tarts
  1.  Preheat oven to 375 °F
  2. Place pie tarts (unbaked) on cookie sheet
  3. Place 4 tomato quarters in each pie tart. 
  4. Wedge about 3 -4 pieces of halloumi cheese between the them
  5. Season with chopped thyme
  6. Bake for about 15-30 minutes or until the pastry and the cheese is a bit browned
  7. Allow to cool a bit before serving

 Serves 12 people (approximately 3 each)

Give up what ?!!!!

I feel like I am 23 years old.  On the inside.  On the outside, my 43-year old body is telling me a different story.  As we age, there are fun things that begin to happen.  It doesn’t matter if you are male or female, you notice the changes. 

There are expiry dates on body parts.  I truly believe this.  Suddenly ankles seem to make weird cracking noises.  Back pains…upper and lower.  It’s like there is a bullseye on your back.  “Aaargh….Ow….I can’t move or stretch or bend or breathe!”  Nothing like it.  Eye twitches, joint pains, Achilles heals, tendonitis, stiff knees, weird moles, etc. This is the age of “I slept funny”.  Sleeping used to be easy.  Close your eyes and sleep.  Now, you never know what crick you will wake up with the next day. 

I decided to talk to my sister-in-law about making my life healthier.  She is a practitioner of homeopathy, naturopathy, kinesiology, iridology, acupuncture.  Yes, quite the mouthful, but  basically…she knows her stuff!  Anyway, I started a NO chip / chocolate / candy / ice cream / sugar / anything-defined-as-snack-food eating style.  The new “old school” eating style.  Go back to natural foods and include some daily exercise.  SIL recommended that I start off with a cleanse to purge my body of toxicity.  At least 10 days on this cleanse and come out a brand new you. 

So, she sent me a list of items I COULD eat on this wonderful cleanse.  All veggies and legumes, grains, chicken and fish.  Awesome!  Now, over to the right side of the page was the NO list.  No beef or pork.  Fine.  No fruit.  That’s ok, I’m a veggie lover.  No potatoes.  No bread or anything made with yeast.  Done.  And then I saw it and was horrified.  NO DAIRY.  What?  That means NO CHEESE.  This was sacrilege!  She calmly replied:  “You can give up cheese for ten days.”  Me…give up cheese!  NO! NEVER! NEIN! NYET!  I love cheese.  I love cheeses.  I love everything cheesy.  I love Blue cheese. I love Swiss cheese.  I love Cream cheese.  Bocconcini and Jarlsberg and Gouda and Ricotta and Cottage cheese and Mozzarella and Provolone and Fruilano and Parmessan.  I even love Kraft processed cheese slices.  As you can obviously tell….I LOVE CHEESE!  To make matters worse, I have infected my family with the desire for cheese.

It started with The Wiz.  Kraft cheese slices, my goodness.  Fantastic with Kraft Dinner macaroni.  Mmmmm.  So creamy.  Who cares if it’s a leftover scrap cheese made anew.  It is amazing!  He also loves good ol’ cheddar especially shredded on nachos.  Yum!  The Princess and The Debater agree, hands down, that mozzarella is the best (preferably Salerno brand).  They refer to it as  “The Good Cheese”.  That white brick of yumminess never lasts long.  We have even infected the family newbies.  Actually, The Baker just prefers cream cheese, but that still counts.  The Artist is now a renegade Mozzarella fan.

Cheese is the rescuer of many a failed dinner recipe.  Cheese elevates dishes to a new level.  Gooey or creamy…nothing like cheese.  To get nice smiley faces in pictures we tell everyone to say “Cheese”!  Need I say more.

Thank you to the cows or goats or sheep or buffalo that provide this lovely snack / meal.  Thank you to the cheese makers.  You are artists.  You are creators of taste sensations.  Thank you to all the retailers who have decided to sell such varieties to us consumers.  And thank you to my patient sister-in-law.  Although giving up cheese would make my body feel better, you let me be and don’t judge me for my cheese addiction. 

P.S. In the end, I did take my SIL’s advice.  I decided to proceed with the cleanse and forgo cheese for 10 days.  After just 3 days I was feeling more alert and more energetic.  Any bloating I had experienced before was gone.  It was wonderful! I felt great! 

I must be a fast healer.  I accomplished in 3 days what should have taken 10 days.  Time to celebrate my victorious achievement!

Pizza Presto

I LOVE pizza!  Always have and always will.  To me, there is something just so tasty and comforting about pizza.  If you get the right sauce combination, you know, not too spicy, but fragrant enough with the right herbs, you have built the best base to start your layering of a fabulous pizza masterpiece. 

I have purchased frozen store pizzas to mangia.  Then I switched to making my own homemade dough (via bread maker).  I found it was much tastier.  On quickie dinner nights,  I have purchased a slab pizza, from the local bakery.  It is a baked slab with just pizza sauce.  I add my choice of delicious toppings and..voila!  Dinner in 30 minutes. (I love chopping and slicing everything by hand.  Makes me feel like a real professional chef!)

Then there was the day that I was craving pizza and had no dough.  I also had no desire to wait for homemade dough, and absolutely no desire to go to store to buy some dough.  What to do?

 Necessity is the mother of invention. I foraged through my fridge and found Greek pita bread.  (They are different from regular pitas in that you can’t stuff them.)  I noticed that they are the thickness of a thin crust pizza and really, all I needed was a vessel that would carry my pizza toppings.

So it began.  I  pulled out a pita, put on pizza sauce, layered some shredded mozzarella on top, topped that with chopped onions, then some mushrooms, and finally tomato slices.  I decided to forgo the pepperoni that day.  That adventure could be saved for another day.  Instead of turning the oven on, I put that into the toaster over on 400 degrees for 15 minutes.  Molto bene!  Fantastic!  Personal pizza ready in 20 minutes.  Mmmmmm!

This discovery has also assisted me in many ways since.  Since they are really “personal size”, I could top each one with whatever the kids liked to have on it.  Some preferred more meat, some preferred more veggies.  In the end, there was something for everyone.

This has become my go-to hot appetizer as well.  I cut each pita into 8 wedges and ta-da!  Little mini pizza hors d’oeuvre.  Very pretty too.

Vary the recipe as well.  Use Bononcini or goat cheese instead of mozzarella.  Use an olive oil, with garlic infusion, instead of pizza sauce. 

Pizza really is a versatile dish.  Easy to make, easy to eat, and just makes your taste buds feel sooooo happy.

Hmmmm, I’m kind of craving some pizza right now.  Mmmmmm.  How about you?

And I called him…Fernando

Being the main chef in the house, I try to ensure that we eat healthy.  I try to incorporate all the food groups:  meat and potatoes.  Well, that is the Wiseguy version of the food groups.  His food group triangle is more of a dosey-doe with carbs and proteins living happily ever after.

I have never been good at reading food labels.  I had no idea what all the percentages meant.  I decided that it was time to shed my winter weight and find my summer me.  That involved finding a diet that would work for me.  In my mind, the word diet always brought to mind the cartoon cat Garfield, as his saying was “Diet is Die with a T”.  Yes, that is how every diet felt.  I would start off great!  Low carbs, working out at least 30 minutes a day, cut back on cheese (waaaah…I LOVE my cheeses), watching my calorie intake.  That was the part I really disliked.  In the past, cutting back too much made me feel so mean because thin people were eating all the foods I loved…pizza, wings, french fries, just to name a few.  After a couple of weeks the cheating would begin.  Yes, I was really cheating on myself and my health, but that didn’t matter.  I was justifying having that extra slice of pizza because I would work it off the next day.  NOT!  And once I fell off the wagon…too late.  I was trampled and dead by all those yummy foods that I decided to just give up.

Next, I went to my local library (yes, I have a library card and at a later date, we shall discuss the amazing benefits of libraries), I signed out at least 8 different diet books.  From the greatly touted Southwest diet to the Skinny Bs diet, to the Mediterranean diet, to the Diabetic diet.  There was one diet book that intrigued me the most. I had flipped through most of them, but I actually took the time to read through this one book.  So impressed was I, that I bought the book.  The G.I. Diet.  At first I wondered what my childhood doll G.I. Joe had to do with a diet, but G.I. stood for glycemic index.  What is that?

Simple…sugar.  Basically, that is what it was about.  The books explains what foods give you that instant jolt of sugar (that leaves you craving more after about 30 minutes) and what foods actually give you sustenance so you don’t feel hungry.  Even more interesting was that you would eat about 6 times a day…almost every two hours.  To make it even easier, they colour coded columns of foods in simple red, yellow, green.  Avoid the red, easy on the yellow, chow down on green.  Cool.  KISS – keep it super simple.

Now add to that my invitation to join Fitness Pal.  The Baker had used it and said that it was amazing.  So she and The Wiz loaded the app on my antiquated iPhone.  You can use it on your computer as well.  That website and Calorie Counter were really an eye opener.  I never realized how many calories were in certain foods.  You type in the food and it shows you how many calories.  With Fitness Pal (this was my favourite challenge) you enter you workouts (be it bike riding or dog walking or zumba) and then you get extra calories that you can eat.  Yes!  Something that will actually let you eat more so you don’t feel deprived. 

Sounds strange, but oftentimes I picked ice cream over a full dinner meal.  I gave myself cheat days, or not.  Eating in moderation is all it really takes and adding exercise to it.  Exercise, (exorcise?) the demon in my life, is what I tell myself I have to do.  Sort of like taking icky cough medicine when you were younger.  To get better you had to do it. 

I know that everyone out there has their favourite way to deal with weight gain or inactivity, but for me personally, this worked.  (I lost 20 pounds in 45 days…yay me!)

My next challenge, which is not as easy, is to get myself and Wiseguy to eat our fruits.  My chef expertise managed to get vegetables into our suppertime menu, but our challenge has always been fruits. 

Neither of us is a fruit eater.  I watch FIL (father in law) eat grapes and apples and bananas with glee and yet Wiseguy and I look at it as a poison chalice.  The thought of a smoothie, though it looks pretty and colourful when done, just doesn’t seem right.  In my mind, I have teeth and should use them to chew my food.  Better still, I really dislike having food caught in my teeth so I NEED to cut my fruit to avoid such agony.  Yes, I agree, I am a Drama Queen about this fruit problem, but I figure at least an ingenious excuse is a good one.

I am back on track now, especially with summer coming.  I have stocked my crisper drawer with delicious (that is their name) apples, granny smith apples, bosc pears, green seedless grapes, blueberries, strawberries, and ripe navel oranges. 

After making Wiseguy’s sandwiches for lunch tomorrow with chicken breast on whole wheat bread, I decided to try and add a lovely round fruit to his lunch mix.  Usually his fruit of choice is an apple because it can last over a week in his lunch box going on his “excellent adventures”.  After the trip is over, said apple comes back to me to either commit suicide in our green bin or to become a gang member in apple streudel or apple pie.  For tomorrow, I have decided to try something new on Wiseguy.  He picked an orange.  Nice, lovely, round, and orangey orange.  Should make a lovely snack for tomorrow.

I looked at that poor nameless orange and thought of all the distance it would be traveling.  Wiseguy is a truck driver and many miles and kilometers are covered in his treks.  I looked at the California orange and thought about how unfair it would be for another long journey across Ontario instead of the United States.  So, I did something that might not seem fair…I named the orange.  Heloooo Fernando.  Enjoy your trek  buddy.  Good luck!  Hopefully, Wiseguy will pity you on your lonely journey and condemn you to death.  Death by healthy eating decree!  Wiseguy…welcome to vitamin C !   (P.S. I actually used a food grade marker and wrote Fernando on the orange.  Perhaps the desire to tell people of “How I Ate Fernando” will inspire Wiseguy.)

Dance like no one’s watching

I watch little Kennie dancing to music and can’t help but laugh.  It’s too cute!  It’s funny!  No matter how much WE laugh she keeps right on creating her own dance moves.  There is arm swinging and some jumping and quickie deep knee bends.  Then there is the stick out your butt move and the rhythmic clapping.   Not to mention the swaying and the laying down and getting back up.  Yup, we laugh.  Really good belly laughs.  Does this make her stop doing what she’s doing or make her run away?  Heavens no!  She is there to dance and have a great time.  Who cares what anyone else thinks?

When did everyone else’s opinion become the most important to us?  When did we forget that we have to love ourselves first.  We are who we are and by loving ourselves we can only shine brighter in anything we do.

I am constantly saying that I can’t draw.  I look at the pictures and sketches that The Artist draws and I am amazed.  I would LOVE to be able to quickly jot down lines and make a beautiful finished product.  I recall my early early sketches.  Drawing family was always the best.  You remember, the stick people wearing pants and skirts.  The curly hair.  There was always a big round sun and birds…well, more like Ms flying around, but we knew they were birds.  And we could draw a million pictures a day and they were ALL the best.  Not one was bad.  All the people in the picture were smiling too.  Yes, everyone was happy and my picture showed it.  When did my drawings go from “Way to Go!” to “Oh No“?

Same thing with telling jokes or making music or singing loudly or boogie woogie dancing.  When we were little we could do anything and everything.  We were invincible!  School started and suddenly it seemed that we were “very good” at some things but at other things we “needed improvement”.  I am not saying the school system is bad or that parents mean to belittle their children.  It was all done to make sure that we would be protected.  Here is the concept:  they will show you your shortcomings so that you won’t embarass yourself and no one will laugh at you and this way you won’t have your feelings hurt.  It’s ok that they, the ones who love you, tell you that you aren’t good enough because they love you.  Makes sense right? 

It never really made sense to me.  What does it matter who actually says it as it will hurt your feelings no matter who says it.  That is, it will hurt you if you are constantly relying on others’ opinions of yourself.  What if we told children and friends and family only about all the good stuff.  Give them that daily boost.  Make them see how wonderful they are.   Think how much nicer our world would be if we consciously decided everyday that we were the best and we could do anything.  You would be happy all day!  

This year I decided that it was time to prove to myself (not anyone else) that I could do the things that I had been moulded into believing that I could not.  It started quite innocently when The Baker came over (thankfully) to help me bake goodies for my niece’s bridal shower.  It is tradition for family (and friends) to bring sweet treats and I was tempted to go to the local coffee shop and pre-order a whack of donut holes that I could stick with toothpicks on a foam pillar.  Yup, if nothing else, I would get bonus points for creativity.  The Baker jumped in and volunteered her time and baking expertise to make me look like a star.  We baked chocolate cupcakes.  We created yummy frostings (one cream cheese and one peanut butter).  We continued with fruit tarts.  Yes, I was nervous.  Yes, I kept saying “no no..you’re the baker, I’ll just help”.  Nope, she would have none of it.  We baked, we frosted, we made simple syrup for the tarts.  Some attempts didn’t work out and others turned out fantastic.  Whose goodies looked great the next day at the shower?  Yup, mine sure did! 

What I realized most was that, yes, it was nice for everyone to oooohhh and aaahhh at the dessert masterpieces, but I just felt so proud and good inside because of what I had accomplished.  I had baked!  Me!  Me the one who tells everyone I have ice cream on hand for dessert because I don’t bake.   Thanks to The Baker for pushing me.  Sometimes a kick in the pants is a good thing.  She never doubted me so why did I?

This year I am going to continue my journey into bakingdom.  From there I am going to sit with The Artist so that she can give me some pointers on how to move beyond my awesome stick people drawings.  I also have all these neato machines needed for scrapbooking (cricut and expressions…amazing stuff) and will be making my own cards.  The Artist made elegant “save the date” cards for her wedding.  Absolutely beautiful.  So I will definitely be telling myself that I CAN DO IT and I will forget about what I had heard for so many years about how I couldn’t do something.

With every new venture I will enjoy the learning and all the hiccups and hardships that come with it.  Most importantly, when someone decides to point out that something doesn’t look nice or I did it wrong, it really won’t matter because I have almost finished learning Kennie’s flamboyant dance moves.  Dance on in life like no one’s watching and be happy!

This is it!

I have finally decided that I should enter the exciting blogosphere world!

I myself am an avid googler and searcher of all things exciting and popular and fun and educational.

My life, like everyone else’s, is full of so many interesting people, places, and things.  I am hoping to share my joys and my sorrows (which I am hoping are few and far far between). Life is a wonderful adventure and with my husband (a.k.a. wiseguy) of 21 years, he has been the one that makes me laugh and has always been the one that could bring me out of a slump or make me laugh until my stomach ached.  I’m a lucky girl for that.

I have happily become the proud stepmom or 3 grown children and 5 grandchildren.  Being part of their lives has also been an experience in and unto itself.  Love you guys!

Welcome to my blog and to my life.  I am happy to be able to share with you the interesting view I have of life and my opinions on it as well. Agree or disagree with me, it makes for an interesting read.

I welcome myself to the Land of Blogs and am really excited about my new journey into the realm of the unknown.  Computer illiterate…yes, that would be me.  I welcome anyone willing to spend any minute amount of time actually wondering what has gotten into my head on a daily basis.   (We’ll work through the cobwebs and the derailed trains of thought together.)
